How to Make Vegan Cajun Pasta
Boil your pasta in a pot with salted water until al dente.
It will take around 5-7 minutes.
In a nonstick frying pan over medium heat warm the olive oil and cook your diced onion and red pepper for 1-2 minutes.
Stir in the flour and cook for another 2 minutes.
Stir in the coconut milk and let the whole mixture thickens slightly.
Add the salt and pepper to taste, paprika powder, garlic powder, onion powder, and dried oregano.
Finally, stir in the tomato sauce and cook for 2-3 minutes more.
Drain and stir your pasta into the sauce.
Serve in a bowl and sprinkle some freshly chopped parsley.
