How to Make Vegan Tofu Fried Rice
To make this vegan fried rice in a nonstick frying pan over medium heat warm the olive oil and cook the diced onion, carrot, corn, peas, and tofu for about 5 minutes.
Stir in the sriracha sauce, salt, and pepper to taste, dijon mustard, peanut butter, turbinado sugar, onion powder, garlic powder, and cook for about 2-3 minutes.
Finally stir in the cooked rice and cook for another 4-5 minutes stirring gently and adding some water to make everything bind together.
Serve in a bowl with freshly chopped parsley, sesame seeds and enjoy.

- 1 small onion diced
- 1 carrot peeled and diced
- ΒΌ cup canned corn
- β cup frozen peas
- 3 oz. smoked tofu diced into small cubes
- 2 tablespoons sriracha sauce
- Salt and pepper to taste
- 1 teaspoon dijon mustard
- 1 tablespoon peanut butter
- 1 tablespoon turbinado sugar
- 1 teaspoon onion powder
- Β½ teaspoon garlic powder
- 1 cup brown rice cooked
- Β½ cup water
- Freshly chopped parsley for garnish
- Sesame seeds for garnish
