- 200 grams Chicken Breast Fillet cut into strips
- 100 grams Brown Mushrooms sliced
- ΒΌ cup Minced Shallots
- 2 tbsp Butter
- ΒΌ cup Madeira Wine
- 1 cup Demi-Glace
- 3 tbsp Shredded Parmesan
- Salt and Pepper to taste
- 200 grams Cooked Penne Rigatte
- Fresh Parsley for garnish
Season chicken with salt and pepper.
Heat butter in a pan.
Add chicken and sear until brown on both sides. Set aside.
Add shallots and mushrooms. Sautee until shallots are translucent.
Add madeira and simmer until completely reduced.
Add demi-glace. Simmer until reduced by half.
Toss in pasta, chicken, and parmesan.
Season to taste with salt and pepper.
Garnish with fresh parsley to serve.
