Ingredients
  

  • 200 grams Chicken Breast Fillet cut into strips
  • 100 grams Brown Mushrooms sliced
  • ΒΌ cup Minced Shallots
  • 2 tbsp Butter
  • ΒΌ cup Madeira Wine
  • 1 cup Demi-Glace
  • 3 tbsp Shredded Parmesan
  • Salt and Pepper to taste
  • 200 grams Cooked Penne Rigatte
  • Fresh Parsley for garnish

Instructions
 

  • Season chicken with salt and pepper.
  • Heat butter in a pan.
  • Add chicken and sear until brown on both sides. Set aside.
  • Add shallots and mushrooms. Sautee until shallots are translucent.
  • Add madeira and simmer until completely reduced.
  • Add demi-glace. Simmer until reduced by half.
  • Toss in pasta, chicken, and parmesan.
  • Season to taste with salt and pepper.
  • Garnish with fresh parsley to serve.
