Vodka Sauce Rigatoni Pasta
You can't go wrong with this quick and delicious vodka sauce rigatoni pasta.
- 100 grams Bacon chopped
- ¼ cup Minced Shallots
- 2 oz Vodka
- 1 cup Diced Tomatoes
- 1/3 cup Heavy Cream
- 3 tbsp Shredded Parmesan
- Salt and Pepper to taste
- 200 grams Cooked Rigatoni
- Fresh Parsley for garnish
Cook bacon in a pan until fat is fully rendered.
Add shallots and sautee until translucent.
Add vodka and simmer until fully reduced.
Add diced tomatoes. Bring to a simmer.
Stir in cream.
Season with salt and pepper as needed.
Toss in cooked pasta.
Top with parmesan and fresh parsley to serve.
