  • 100 grams Bacon chopped
  • ΒΌ cup Minced Shallots
  • 2 oz Vodka
  • 1 cup Diced Tomatoes
  • 1/3 cup Heavy Cream
  • 3 tbsp Shredded Parmesan
  • Salt and Pepper to taste
  • 200 grams Cooked Rigatoni
  • Fresh Parsley for garnish


  • Cook bacon in a pan until fat is fully rendered.
  • Add shallots and sautee until translucent.
  • Add vodka and simmer until fully reduced.
  • Add diced tomatoes. Bring to a simmer.
  • Stir in cream.
  • Season with salt and pepper as needed.
  • Toss in cooked pasta.
  • Top with parmesan and fresh parsley to serve.
