Gluten Free Beef Enchilada Casserole

  • 2 tablespoons olive oil
  • 1 lb ground beef
  • Salt and pepper to taste
  • 1 tbsp dijon mustard
  • 1 tbsp ketchup
  • 1 tsp dried oregano
  • 1 tsp dried garlic powder
  • 1 tsp onion powder
  • ½ chili flakes
  • 4 Gluten free big flour tortillas
  • 1 cup enchilada sauce or tomato sauce
  • 2 cups grated cheese
  • Spring onion for serving


  • Warm the olive oil in a nonstick frying pan over medium heat.
  • Stir in the ground beef and cook for around 2 minutes.
  • As soon it starts to get a brown color stir in the salt and pepper to taste, dijon mustard, ketchup, mustard, oregano, garlic powder, chili flakes, and onion powder.
  • Cook for about 5-8 minutes until everything looks cooked and combined.
  • In a casserole pan lay down 2 big tortillas and sprinkle some of the ground meat mixture.
  • Add some enchilada sauce on top and sprinkle some grated cheese.
  • Repeat the same process again - tortillas, ground meat, enchilada sauce and grated cheese.
  • Bake the casserole in an already heated oven at 350 F or 180 C degrees for about 20 minutes.
  • Serve and enjoy.
