- ½ cup Pumpkin Puree
- ¼ cup Brown Sugar
- 2 tbsp Canola Oil
- ½ tsp Vanilla Extract
- 1 cup Flour
- 1 tsp Pumpkin Spice
- ½ tsp Baking Powder
- Pinch of Salt
- For the Cream Cheese Frosting
- 2 tbsp Soft Butter
- 2 oz Cream Cheese softened
- ½ tsp Vanilla Extract
- 1 cup Powdered Sugar
Whisk together flour, pumpkin spice, baking powder, and salt in a bowl.
In a separate bowl, blend together pumpkin puree, brown sugar, canola oil, and vanilla extract.
Blend the dry mixture into the wet ingredients.
Take tablespoonfuls of the dough and roll into balls. Slightly flatten and arrange on a baking sheet lined with parchment.
Bake for 12-15 minutes at 350F.
Take cookies out of the oven and leave to cool.
Blend together all ingredients for the frosting in a bowl. Frost the tops of each cookie.
