- 500 grams Potatoes peeled and diced
- ΒΌ cup Minced Leeks
- 2 tbsp Butter
- 2 tbsp Flour
- 4 cups Chicken Stock
- 1 cup Heavy Cream
- Salt and Pepper to taste
- Optional Garnish: croutons chopped spring onions
Heat butter in a pot.
Add potatoes and leeks. Sautee for 1-2 minutes.
Dust flour into the pot. Roast for a minute.
Whisk in stock.
Simmer for 15 minutes.
Puree the soup with an immersion blender.
Stir in the heavy cream and bring back to a simmer.
Season with salt and pepper to taste.
