Combine all ingredients for the filling in a pan.
Simmer over medium heat for 10 minutes or until apples are tender as preferred.
Leave to cool slightly.
Combine all ingredients for the syrup in a saucepan.
Heat until sugars are fully melted.
Fill tortillas with apple filling and roll to close.
Arrange filled tortillas in a buttered baking dish.
Pour prepared syrup into the dish.
Bake for 30 minutes at 350F.
Drizzle caramel syrup on top of the enchiladas to serve.

Ingredients
For the Filling:
- 3 Apples peeled and diced
- 1/4 cup Brown Sugar
- 1 tsp Cinnamon
- ¼ tsp Nutmeg
- 1 tbsp Cornstarch
For the Syrup:
- ½ cup Sugar
- ¼ cup Butter
- ¼ cup Water
- 1 tsp Cinnamon
To assemble:
- 4 Flour Tortillas
- 2 tbsp Caramel Syrup
Instructions
- Combine all ingredients for the filling in a pan. Simmer over medium heat for 10 minutes or until apples are tender as preferred. Leave to cool slightly.
