How to Make Gluten Free Beef Enchilada Casserole
Warm the olive oil in a nonstick frying pan over medium heat.
Stir in the ground beef and cook for around 2 minutes.
As soon it starts to get a brown color stir in the salt and pepper to taste, dijon mustard, ketchup, mustard, oregano, garlic powder, chili flakes, and onion powder.
Cook for about 5-8 minutes until everything looks cooked and combined.
In a casserole pan lay down 2 big tortillas and sprinkle some of the ground meat mixture.
Add some enchilada sauce on top and sprinkle some grated cheese.
Repeat the same process again – tortillas, ground meat, enchilada sauce and grated cheese.
Bake the casserole in an already heated oven at 350 F or 180 C degrees for about 20 minutes.
