How to Make Thai Drunken Noodles
Cook the rice noodles to your liking, rinse under cold water and drain well.
Heat the oil in a skillet over medium high heat on the stove.
Add in the onions and peppers, and saute for 2 minutes.
Mix in the shrimp, and saute until the shrimp is cooked through.
Stir in the tomatoes,
carrots
and green onions, and saute another minute or two longer.
In a bowl, combine the ingredients for the sauce.
Place the noodles into the skillet, and stir to combine.
Pour the sauce into the skillet, and toss to coat the ingredients well.
Stir in the basil,
and serve immediately.

Ingredients
- 8 oz. Rice noodles
- 12 oz. Shrimp peeled and deveined with the tails on or off
- 2 Tbsp. Olive oil
- ½ C. Chopped onion
- 1 Red bell pepper sliced
- 1 Roma tomato chopped
- ½ C. Matchstick carrots
- ¼ C. Green onions chopped
- ½ C. Chopped fresh basil
For the sauce:
- 2 tsp. Minced garlic
- 1 tsp. Ginger paste
- 1 tsp. Sesame oil
- ¼ C. Soy sauce
- 2 Tbsp. Oyster sauce
- Red pepper flakes to taste optional
