Blueberry Muffin French Toast Roll-Ups

- 4 slices White Bread crusts trimmed off
- 1 Egg
- Β½ cup Milk
- Β½ tsp Vanilla Extract
- 2 tbsp Butter
- ΒΌ cup Cream Cheese softened
- 2 tbsp Blueberry Preserve
For the Streussel Topping:
- 3 tbsp Almond Flour
- 1 tbsp Melted Butter
- 1 tbsp Brown Sugar
- ΒΌ tsp Cinnamon
- ΒΌ tsp Nutmeg
Spread cream cheese and blueberry jelly onto slices of bread. Roll into logs.
Whisk together egg, milk, and vanilla extract in a bowl deep dish.
Dip each roll in the milk mixture until evenly coated.
Heat butter in a non-stick skillet.
Toast roll-ups until golden on all sides.
Blend together all ingredients for the streusel in a bowl and sprinkle over roll-ups.
