Air Fryer Popper Taquitos

These homemade air fryer popper taquitos are so easy to make and delicious.

Ingredients
  

  • 2-3 fresh jalapeños
  • 1/2 cup of cooked bacon diced
  • 2/3 cup of cooked chicken diced
  • 1 8 oz package of cream cheese softened
  • 1 cup of shredded cheese
  • 1 tablespoon of minced garlic
  • 12 yellow corn tortillas

Instructions
 

  • Prepare the jalapeño. Remove the seeds and endocarp (the white membrane that seeds are attached to). This removes the heat of the pepper as well as the bitterness. Once cleaned, dice the jalapeño into small pieces. Make sure to wash your hands and fingernails thoroughly after handling peppers.
  • Add cream cheese, shredded cheese, peppers, bacon, chicken, and garlic to a mixing bowl, and using a stand mixer or hand mixer, incorporate the ingredients until a filling is formed.
  • Microwave the tortillas until soft and pliable. Fill each tortilla with 1 1/2 tablespoon of filling. Roll the tortilla up and place it in oil sprayed air fryer basket. Fill the basket leaving some room between taquitos.
  • Spray taquitos with oil and cook at 350 for 8 minutes or until taquitos are crispy.
  • Serve with cilantro, fresh jalapeños, and lime. Ranch makes a perfect dipping sauce.
