Ingredients
  

  • 1.5 tbsp Butter
  • 2 tbsp Minced Shallots
  • 150 g Chicken Breast sliced
  • 2 tbsp Tomato Paste
  • ¼ cup White Wine
  • 1 cup Heavy Cream
  • 1 tsp Chipotle Powder
  • 150 grams Cooked Penne Rigatte Pasta
  • ¼ cup Sweet Peas
  • ½ cup Sliced Zucchini
  • 2 tbsp Shredded Parmesan Cheese
  • Fried Tortilla Strips optional

Instructions
 

  • Heat butter in a pan.
  • Add chicken. Stir until slightly brown on all sides.
  • Add shallots. Sautee until translucent.
  • Add tomato paste. Roast in the pan for about a minute.
  • Deglaze the pan with white wine. Simmer to reduce.
  • Add the heavy cream and chipotle powder. Bring to a gentle simmer.
  • Toss in cooked pasta, peas, and zucchini.
  • Season with salt as needed.
  • Transfer to a serving platter then top with parmesan and fried tortilla chips.
