- 6 Eggs
- 1/4 cup almond milk
- 1/2 cup chopped spinach
- Crumbled feta
- 1 diced red pepper
- Fresh chopped dill for garnish
Pre-heat oven to 350
Add eggs and milk to a mixing bowl and whisk well
Chop spinach and red pepper and add to muffin tin. You will want to fill the muffin tins about 1/4 of the way.
Pour egg mixture into muffin tins until 1/2 full
Add a pinch of feta to each 6. Place in oven on center rack and cook 20 minutes
Let cool for 5 minutes. Garnish with dill and serve with Greek yogurt if desired
