Ingredients
  

  • 6 Eggs
  • 1/4 cup almond milk
  • 1/2 cup chopped spinach
  • Crumbled feta
  • 1 diced red pepper
  • Fresh chopped dill for garnish

Instructions
 

  • Pre-heat oven to 350
  • Add eggs and milk to a mixing bowl and whisk well
  • Chop spinach and red pepper and add to muffin tin. You will want to fill the muffin tins about 1/4 of the way.
  • Pour egg mixture into muffin tins until 1/2 full
  • Add a pinch of feta to each 6. Place in oven on center rack and cook 20 minutes
  • Let cool for 5 minutes. Garnish with dill and serve with Greek yogurt if desired
