- 1 tablespoon Cajun Spice Blend
- 1 tablespoon Olive Oil
- Salt, to taste
For the salsa :
- ½ cup Diced Pineapples
- 1 Jalapeno, deseeded and diced
- 1 small Shallot, minced
- 1/2 teaspoon Sugar
- Salt and Pepper, to taste
Toss together all ingredients for the salsa in a bowl. Chill until ready to serve.
Brush chicken fillets with olive oil. Season with salt and cajun spice on both sides.
Grill for 7-10 minutes per side.
