  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Pumpkin Spice
  • ¼ cup Pumpkin Puree
  • 2 oz Cream Cheese softened
  • 1/3 cup Sugar
  • 1 Egg
  • ¼ cup Canola Oil
  • 1 tsp Vanilla Extract

For the Icing:

  • 1/3 cup Powder Sugar
  • 1 tbsp Milk


  • Whisk together flour, baking powder, salt, and pumpkin spice in a bowl.
  • In a separate bowl, blend together cream cheese, pumpkin puree, and sugar. Add the egg, oil, and vanilla extract. Blend until smooth.
  • Blend the dry ingredients into the wet mixture.
  • Divide the batter into a lightly-oiled muffin pan.
  • Bake for 25 minutes at 350F.
  • Blend powdered sugar and milk in a bowl.
  • Take muffins out of the oven and leave to cool before frosting.
