  • For the Cookies
  • 1 cup Peanut Butter
  • 1 Egg
  • 1/3 cup Powdered Sugar
  • Β½ tsp Vanilla Extract
  • For the Filling
  • ΒΌ cup Peanut Butter
  • 2 tbsp Butter softened
  • ΒΌ cup Powdered Sugar
  • Β½ tsp Vanilla Extract


  • Preheat the oven to 350 degrees.
  • In a mixing bowl, combine the ingredients for the cookies, and beat together until well blended.
  • Separate the dough into 20 equal pieces, and form each one into an oblong shape. Flat each oblong cookie, and pinch in the center to form the shape of a peanut.
  • Take the tines of a fork and press it in a criss cross design across the top of each of the cookies.
  • Bake the cookies for 10-12 minutes until browned and cooked through. Let the cookies cool to room temperature.
  • In a mixing bowl, combine the ingredients for the filling, and blend until creamy and smooth.
  • Place a thick layer of the filling on the bottom of one of the peanut shaped cookies. Place another cookie on top of the filling face down.
  • Put the cookies into the freezer for 30 minutes to chill before serving.
