Ingredients
  

  • 2 tbsp Olive Oil
  • 1 tbsp Minced Shallots
  • 2 tsp Minced Garlic
  • ΒΌ cup Diced Tomatoes
  • Β½ cup Diced Red Bell Pepper
  • Β½ cup Diced Yellow Bell Pepper
  • Β½ cup Zucchini
  • ΒΌ Frozen Peas
  • 2 tbsp Tomato Paste
  • 1/3 cup Red Wine or stock
  • 1 cup Heavy Cream
  • 2 tbsp Fresh Basil chopped
  • Salt and Pepper
  • 150 grams Cooked Fettucine

Instructions
 

  • Heat olive oil in a pan.
  • Add shallots and garlic. Stir until aromatic.
  • Add tomatoes and sautee until slightly soft.
  • Add peppers, zucchini, and peas. Stir for 2-3 minutes.
  • Add tomato paste and roast briefly.
  • Deglaze the pan with red wine or stock. Simmer until fully reduced.
  • Add heavy cream and simmer until thickened.
  • Season with salt and pepper.
  • Toss in fettucine and fresh basil.
