- 2 tbsp Olive Oil
- 1 tbsp Minced Shallots
- 2 tsp Minced Garlic
- ΒΌ cup Diced Tomatoes
- Β½ cup Diced Red Bell Pepper
- Β½ cup Diced Yellow Bell Pepper
- Β½ cup Zucchini
- ΒΌ Frozen Peas
- 2 tbsp Tomato Paste
- 1/3 cup Red Wine or stock
- 1 cup Heavy Cream
- 2 tbsp Fresh Basil chopped
- Salt and Pepper
- 150 grams Cooked Fettucine
Heat olive oil in a pan.
Add shallots and garlic. Stir until aromatic.
Add tomatoes and sautee until slightly soft.
Add peppers, zucchini, and peas. Stir for 2-3 minutes.
Add tomato paste and roast briefly.
Deglaze the pan with red wine or stock. Simmer until fully reduced.
Add heavy cream and simmer until thickened.
Season with salt and pepper.
Toss in fettucine and fresh basil.
